So I found this recipe on Pinterest.
Lots of conversations start like that. So I found this recipe / decorating idea / outfit / hair style / yes, I have a slight addiction.
But anyway, this recipe. Good stuff, right? It was on the menu for last night and I was really looking forward to it. I had chicken getting happy in some Onion Onion marinade in the refrigerator; I even planned ahead and got my dry ingredients together the night before. Dinner was going to come together quick and easy. Quickly and easily, I know, but that’s not a thing.
A few things happened along the way. I blame it on the fact that we got our wedding pictures back last night and I was antsinmypants dancing in the kitchen while cooking, waiting for Chad to come home from work so we could look at the pictures together (I actually did not peek at them. I couldn’t believe it either.) and I was a wee bit distracted by the excitement.
A) I forgot the onions and garlic. Really, Anna? That’s like step one of basic housewife-ing. If you don’t know what’s for dinner, just sautee some onions and garlic before Hubs comes home and the house will smell like you’ve got it all together. Don’t remember who told me that one but it’s a good one.
B) I added some white wine to the recipe because what saucy recipe isn’t better with some wine thrown in, right? However, I used cheap cooking wine, and when I added the half-and-half, it curdled. Gross, I know. However, curds and cheap parmesan cheese from a can are indistinguishable when a recipe calls for it, and it didn’t taste funny, so I went with it.
C) I thought the final version tasted pretty good, so I dished up the awesomely pink sauce, handed Chad his plate and said, “You like artichokes, right?” To which he gave me the “um, not really but I love you so I eat them” smile. Whoops.
At least the chicken was good. And he willingly took leftovers for lunch today. He’s so good to me.
